Vegan Baking Goddess Project: Dark Chocolate Cherry Cookie

This was a total experiment. I won't bore you with details, but these involved gluten free flour, coconut oil, Xylosweet and shaved unsweetened chocolate.

The verdict? The texture is perfect; like a rich, moist brownie with a crunchy crust. Needs to be way sweeter, they are almost savory, which is not unpleasant, just a bit strange...I think I will use these to make a "cherry shortcake" with sweetened vegan whipped "cream". Now I just need to have a party so I can serve them!

The next batch will also involve some vegan chocolate chips and walnuts...stay tuned!
