In Development: Dark Chocolate Cherry and Lemon Coconut

Can we say spreading issue? Yah. They tasted awesome.

These ended up being a cross between a lemon cookie/blondie and a cupcake. They have coconut flour and shredded coconut but the lemon sort of overpowers it. I'm thinking nix the coconut in the lemon batter, and make a coconut icing to drizzle on top instead...

These would make killer ice cream sandwiches!

The taste of these was MUCH better than the day before (baking with stevia-not so good).
