Friday Dinner: The Best Potatoes Husband Ever Ate. Nice.
My dinner: ritual meal with a twist: instead of dried pineapple, I had an Apple Pie Larabar. This was my third Larabar in less than 24 hours. Conclusion? No bars in the house. When there are bars in the house, I don't care about much else when it comes to nutrition and balance.
Husband's dinner: curry "crispy" chicken, steamed veggies and perfectly roasted new potatoes. The perfectly was courtesy of husband. Blush. The key to great roasting? Use enough oil! No spray here, people. I used one Tablespoon of oil for these and made sure they were all coated before I put them in a 400 degree oven for 40 minutes. I also salt and pepper before they hit the oven. Ta da!
