Split Pea For Laid Off Husband And The Best Show On TV


Well, no more feeling lonely when I'm working from home! Not that I ever felt lonely, but it is nice to have husband around, especially the new super shiny and happy husband. Last night I made a batch of split pea soup, which is his favorite. Here's the very loose recipe:

6 cups chicken stock
2 cups dried split peas
1/4 cup chopped shallot
1/2 pound uncooked sweet Italian chicken sausage (sub your favorite, kielbasa is pretty killer...)
2 cups broccoli and cauliflower, cut in bite sized chunks
salt and pepper
hummus, Parmesan cheese and cilantro to garnish

Bring chicken stock to a boil in a large pot, add split peas. Reduce to medium heat and let simmer for about 40 minutes or until peas are completely soft, almost dissolved.

In a medium frying pan, brown sausage, remove from pan. Using the fat from the sausage, saute the shallot until lightly caramelized.

In the last 10 minutes of cooking, add the sausage, shallots and veggies to the pot and cook until veggies are soft but not mushy.

Serve with a dollop of hummus and a sprinkling of grated parm and some chopped cilantro.

After serving husband his meal, I drove to Beverly Hills to give a massage and when I returned home I got to watch THE BEST SHOW ON TELEVISION (no hyperbole): So You Think You Can Dance? If you don't watch this, you must, I beg you.




Workout: 40 minutes cardio plus abs at Gold's Gym; elliptical, step mill and stationary bike.
