Today's salad consisted of the following: romaine and mixed baby greens, 1/4 cup mixed nuts, sweet peppers, cucumber, 2 Tablespoons goat cheese, 1 Tablespoon Annie's Goddess Dressing, and a healthy dollop of fat free vinaigrette.
I think the salad worked better because of the Goddess Dressing. It added a tartness and a creaminess, although you'd think that the goat cheese would do the same thing, hence the frustrating salad mystery. Grrrr.
I also had broccoli and dried pineapple.
Husband had Sunday Brunch: low carb cinnamon french toast bagel bites, tofu cheesy scrambled eggs and turkey sausage. Lucky boy.
