Brunch in bed

We had a lot of financial catching up to do. We thought it would be fun to do these financials in bed (it is Saturday, after all) and husband thought it would be nice to take our meal to bed as well. So we did.

I fed him eggs with fried prosciutto and tofu cheese, grapes, and french toast bagel bites. Recipe as follows:

1 low carb blueberry bagel
1 egg
5 drops vanilla flavored stevia extract
2 dashes of cinnamon
2 Tablespoons rice milk
1 Tablespoon butter

Combine egg, stevia, cinnamon and rice milk in a bowl and mix well
Cut bagel into bite-sized circles and slosh around in egg mixture. Let stand 5-10 minutes
Heat small pan over medium heat
Add butter to coat pan
Fry the circles on both sides until golden brown

Serve with syrup, powdered sugar or what have you.

Husband said they were delish straight up, and he's not a good liar.

I had the usual: cucumber, broccoli, string cheese and dried pineapple rings.
