Autumn meal

Usually husband is gone for his Monday night meeting.  But husband did not go.  Happiness.  He got to eat more baked "fried" chicken, pasta bake from debate night, salad and fried banana.  Then he ate a mini Key Lime pie.  I think he's full now.

I had broccoli, cheese stuffing (recipe below), cucumber and two little fruit bars (latest obsession).

Cheese Stuffing

Preheat oven to 350 degrees
tear 1 low carb bagel, 1 low carb English muffin and 4 pieces of light bread into bite-sized pieces
Add 1/4 cup Romano cheese and toss
Add 1 1/2 cups of chicken stock and mush together with your hands.  Mixture should be wet, but not swimming in stock
Put mixture into sprayed round cake pan
Top with 2 slices Jarlsberg cheese 1 slice low fat cheddar cheese
Bake 20 minutes and enjoy (if you would enjoy something like this, and most wouldn't, but if you would, please enjoy)

  1. so i'm a broccoli nut as well. do you eat it plain steamed? have you tried lemon juice and pepper? that's my fave. i've also come up with a few other super low-fat/low-cal flavoring to give it a little zing (ginger, rice vinegar, dab of mustard).

    just curious, from one broccoli lover to another. ;)

  2. Haha! I love that when your husband did not have to go to his meeting, you were happy about it. I tell ya, so many people complain and moan about marriage, as though it were something to be dreaded. I just love that you clearly love your husband, lactose-intolerant as he is! By the way, lactose-schmactose: I made an apple-cheddar fritatta tonight *with* half-and-half, and the Midwestern Meateater happily swallowed his lactase pills.

    Yeah, I dream of being a food writer/editor, too...maybe we should just be making our own food communications company! I think I would happily "go" to work every single day if I did that.
