I'm A Bread Baker!




I'm afraid of baking bread.  It reminds me of my years of struggling with math; I would sort of get mathematical concepts but I always seemed to skip a step which would result in countless wrong answers.

When I was a kid I tried to bake a loaf of bread shaped like a teddy bear.  I forgot to let it raise a second time and ended up with a teddy bear brick (a delicious brick, which I managed to eat, but a brick nonetheless).

I was asked to review a book on bread baking and I offered to test a recipe.  My bread baking fears are over!


 


My dough, mid-knead.  I lurve kneading.  It ranks up there with patting a washed whole chicken dry and sitting it on the counter like a little naked baby.  Totally normal.


 


Post knead.  So satisfying already.


 


After it rested in an oiled bowl covered in plastic, I shaped it into a "biguette" (my little sister's made up word because my baguette was so ginormous-funny sister).  My biguette then rested, uncovered for 30 minutes to create a nice "skin", which helps develop a crust during baking.


 


Beauty.  Wish you could smell it.  Right up there with movie popcorn.



 



Not a brick!  This was real bread that tastes REAL GOOD.


 


I am completely inspired.  I plan on making bread for all my clients.  In a world afraid of carbs, it is heartening to  feed someone bread with five simple ingredients:  yeast, sugar, flour, water and salt.

 Biguette

1 teaspoon active dry yeast
1 teaspoon sugar
1 1/2 cups warm water (105-115 degrees)
4 to 4 1/2 cups unbleached all-purpose flour
2 1/2 teaspoons salt


In a large bowl sprinkle yeast and sugar over warm water and let stand until foamy, about 5 minutes. With a wooden spoon stir in 2 cups flour until combined. Stir in salt and 2 cups of remaining flour until mixture forms a stiff dough. On a lightly floured surface knead dough with lightly floured hands 8 minutes, or until smooth and elastic, kneading in enough of remaining 1/2 cup flour to keep dough from sticking. Transfer dough to a lightly oiled deep bowl, turning to coat with oil, and let rise, bowl covered with plastic wrap, until doubled in bulk, about 1 1/2 hours.

Preheat oven to 400 degrees

Punch down dough and form into a long slender loaf about 21 inches long and 3 inches wide. Put loaf diagonally on a lightly greased large or 17- by 14-inch baking sheet and let rise, uncovered, about 30 minutes. (Baguette may be made up to this point 4 hours ahead and chilled.)

Make 3 or 4 diagonal slashes on loaf with a sharp knife and lightly brush top with cool water. Bake loaf in middle of oven 30 minutes, or until golden, and transfer to a rack to cool.

Healing With Carbs



My dear friend Miriam is going through a heinous round of chemo, and often is not willing or able to eat much.  So when girlfriend has an appetite, we FEED her!  Whatever sounds good to her.

In my world of clientele wanting fat free, no sugar, no salt, no flour...going to the store to buy organic WHOLE milk, FULL FAT cheese and good old fashioned pasta was a JOY.


 

Miriam's mac & cheese.  What it is:

2 cups shell pasta

8 oz cottage cheese

8 oz sour cream

8 oz extra sharp cheddar cheese, shredded

20 Club crackers, crushed

1/3 cup grated Romano cheese

Cook pasta al dente.  Drain.  Put pasta back in pot.  Over very low heat, dump all the cheeses (except Romano) into pasta pot and stir in with pasta until its melty.

Crush crackers and Romano cheese in plastic baggie.

Pour pasta mixture into buttered casserole dish.  Pour crushed cracker mixture over pasta and bake at 350 degrees for 20 minutes or until the top is golden and bubbly.


 

Just your basic sweet cornbread.  Came out looking kinda funny, but I love it just the same.  Husband was laughing at it and I said he still had to love it.  That's just how it came out of the oven, it can't help it, and if our child comes out of my oven looking a little worse for wear, he has too love it the same, too.  No, I'm not pregnant.  I just like to plan ahead.

 

Cinnamon butter for cornbread (Miriam has already lost 10 lbs since she started treatment.  We will feed her lots of butter).  Organic butter, pinch of sugar, cinnamon.  Whip it up.  Done.

 

GV truffles.  A girl's gotta have her chocolate.

Friday Night Dinner: Well Done Pizza



After a stressful week, never underestimate the healing powers of pizza.  I keep getting an upset tummy from the pepperoni, yet I keep ordering it.  Addict.

When this pizza reached me, it looked a little peaked.  I like my cheese brown, almost burnt, so I popped this baby in a 400 degree oven for 15 minutes.  The pepperoni was incinerated and the crust was a crouton, but it was freaking delicious!  Now I'm gonna have to do this every time I order pizza.  Addict.


 

Husband ordered chicken ravioli, and I added some broccoli.


 

I also made him a little spinach salad with marinated artichoke hearts.  Clearly, I'm a good wife.

Sunday Lunch



So, so hot again today. I think it's about 90 degrees in our apartment. In Santa Monica. Lovely. Moving next weekend to a MUCH cooler unit. Yippee!

Husband got a roast beef panini with some tomato basil soup.



I made my cinnamon raisin bread pudding, you know, so I could continue my carby weekend. Wouldn't want to pull out now, so close to the finish...

Antibiotic Tummy Trouble= Carb Fest



I woke up last night with weird nausea, stomach pain and light chest pain. Lovely. I promptly made myself comfy on the couch to watch some late night TV in order to distract myself. I simultaneously felt ravenous and thought some bland carbs were in order. Carbs on hand were Ak-Mak crackers, baked blue corn chips and baked potato chips. Felt much better (although not great-antibiotics suck).

Mistakes: Took pill 20 minutes after I ate (forgot to take with meal). Went to bed feeling hungry.



I considered stopping the antibiotics. Then I called my mother who quickly talked me out of it (don't want the infection to return, you see. Duh.). So the plan for the next few days is to only take the antibiotic with a carb, stomach coating kind of meal. For lunch today I decided to make a cinnamon raisin bread pudding. Yum!




The bread was 2 Trader Joe's vegan "Cinnamon Rolls" (these were not sexy cinnamon rolls, they were more like cinnamon raisin bagels). I tore those up and added it to the following mixture:

1 cup unsweetened almond milk
2 egg whites
1 tsp cinnamon
Vanilla stevia (to taste)
pinch sea salt

Baked at 350 degrees for 28 minutes. Topped with 1 Tablespoon Xylosweet and 1 Tablespoon light butter. So comforting, and less than 600 calories for the whole thing.

So I took another pill and am waiting to see how my body reacts...

What Fourth Of July Looked Like



Okay. So I thought husband and Austin were doing a triathlon on the 4th. Like a family triathlon or something (yes, I'm fit but I'm not into swimming or biking en masse) and I would be the cheerleader.

Not so. They were practicing for Austin's triathlon that's happening in two weeks. Husband thought he would feel more confident if they practiced transitioning from the pool to the bike to the road...sweet and thoughtful husband. Here they are, getting ready to ride after swimming (swimming did not happen as the pool was closed for the 4th even though dude on phone insisted they would be open when husband called earlier in the week-oh, bother).






After practice, the boys were ready to refuel and Denny's was on the brain. I have not eaten at Denny's in many moons and haven't eaten pancakes since I was a teenager, but in my continued eating revolution, I ordered two. And ate them. All. I made my own "slam": egg whites, turkey bacon, chicken sausage and 2 buttermilk pancakes. I took off (most of) the butter and used sugar free syrup. They were pretty good, but next time I'm going to indulge in pancakes I think I will go somewhere else. They were kind of tough. I ate my eggs and sausage but not all of the bacon.

Then I looked up the calorie count online and was pleasantly surprised. Not bad! About 800 calories all told. My thought? You really can eat whatever you want, just pay attention to how much and if you have a big, indulgent meal, then make the rest of the day lighter. No biggie.



Husband and Austin got the same dish; the french toast slam. I tried a bite of Austin's french toast. Oh my God in heaven was it good. I think they fry the egg dipped bread. Delish!



After spending the first part of the day in Thousand Oaks, we went to our dear friend (and most loyal blog reader) Rachel's house for a barbecue. It was lovely as always. I have lots of party anxiety (what to say, what to do, what to eat, when can I leave...) but I always know I will feel relaxed and comfortable at a Rachel party. I didn't photograph my food because I was too tired (no excuse, I know) but I had salad, steamed asparagus, a really good turkey burger and a chicken hot dog with no buns. And some baked beans with pineapple. I also made my "raw truffles", which seemed to go over well.

When we got home, I had the watermelon above while we watched The Fashion Show. The outfit we liked the best lost. I guess we can kiss that career in fashion goodbye.

Friday Dinner: The Best Potatoes Husband Ever Ate. Nice.



My dinner: ritual meal with a twist: instead of dried pineapple, I had an Apple Pie Larabar. This was my third Larabar in less than 24 hours. Conclusion? No bars in the house. When there are bars in the house, I don't care about much else when it comes to nutrition and balance.



Husband's dinner: curry "crispy" chicken, steamed veggies and perfectly roasted new potatoes. The perfectly was courtesy of husband. Blush. The key to great roasting? Use enough oil! No spray here, people. I used one Tablespoon of oil for these and made sure they were all coated before I put them in a 400 degree oven for 40 minutes. I also salt and pepper before they hit the oven. Ta da!

Meatballs And Polenta


Husband's meatloaf and polenta. Looks messy. I went to a callback and was not feeling up to anything, much less making a pretty picture. As my friend Tom would say, "harumph".

Pancake Experiment On Father's Day


Been reading about all these alternative pancakes that looked awesome on all the various blogs I adore and cannot stop reading (see "blogs I dig" on the right side of the page). I decided to try one out on husband for his Father's Day breakfast in bed.

I kind of made it up as I went along:

1/4 cup gluten-free baking mix
1 heaping Tablespoon rice protein powder
Scant 1/4 cup rice milk
1 egg
1 teaspoon canola oil
1 teaspoon honey
dash of cinnamon

Whisked all together, it was a very thin consistency, almost like crepe batter.

I added 1 Tablespoon chopped raw pecans and poured into a small frying pan that had 1 teaspoon Earth Balance melted in it.

Once I poured the batter in, I added 6 fat blueberries and about 10 slices of banana. Once I saw bubbles form, I flipped the pancake.


So far, so good. It smelled gorgeous.



Topped with Earth Balance spread and pure maple syrup.

The verdict: husband said the flavor was great; it was a bit dry and grainy. I think the grainy part came from the protein powder. Maybe if I blended the mixture first? Anyone have experience with this?

Pizza!


Sometimes, you gotta have pizza. It's been a hard week (you know, just living in my neurotic, worry addicted brain) and I worked even harder (fulfilled wife, masseuse, assistant, culinary student, copy writer, blogger and social media consultant duties). So as I was driving west on Olympic, I called house husband and asked him to order me a small cheese pizza with whole wheat crust. He did.

Above is my mangled pizza. I was so excited to eat it I forgot to shoot it! I eat the crust first (cuz that's the least sexy part) so that's why it looks tore up.



House husband and I also split a spinach salad: spinach, artichoke hearts, mushrooms, tomatoes, avocado and mozzarella cheese. I order it chopped and toss it with their fat-free honey mustard dressing (it would be Earth, Wind and Flour). Good stuff.



House husband's spicy sausage and peppers, sans pasta. He also had some passion fruit sorbet.

Friday workout: 3.7 mile run with husband (he doesn't want me to call him house husband...we'll see)

Ahh the weekend. I hope I actually relax a bit. We have no plans, except for therapy at 9:00am. Excited to see Fred as we have drastically cut down our sessions when husband got laid off.

Chili And Cornbread



This cornbread was a total improvisation and it turned out pretty good! Not perfect, but totally decent. Here's the ingredients:

1/2 cup Arrowhead Mills gluten-free baking mix
1/4 cup cornmeal
1/2 cup vanilla rice milk
1 Tablespoon honey
1 egg
pinch salt
couple drops vanilla stevia extract

Mixed it all up and put it in a greased pan. Baked at 350 degrees for 20 minutes. It was dense and a bit like a pancake and could have been a touch sweeter. I might add 1/2 cup corn kernels next time.


Chili. 1 pkg lean, organic ground beef, 1 20 oz can kidney beans, 1/2 chopped jalapeno, 1 sauteed onion, 2 cloves minced garlic, 1 20 oz can crushed tomatoes, 2 Tablespoons chili powder, 1 Tablespoon cumin and a generous splash of Worcestershire sauce to zing it up. Simmered for one hour. Done!

Mine: cucumber, broccoli, cheese, nuts and a d'anjou pear.

I'm sorry I haven't posted until Sunday. I've been working like a real working girl, and putting my favorite blog last...mine.

Monday Night Dinner Eaten Consciously


What a day. Husband and I feel like we're running a small business out of our house, which I guess we sort of are. It's actually awesome having meetings in bed about clients and projects. We had so much to discuss, we decided to (eureka!) eat at the table.




Husband's polenta and meatballs. He likes it better than pasta.



Mine: cucumber, broccoli, cheese, nuts and dried pineapple.

Spiced Yam Oatbran Experiment


I was so inspired by husband's oatbran breakfast (which was inspired by Heather), I decided to make my own creation for dinner.

Following Heather's basic recipe, I took 1 cup water in a small pot, added 1/2 cup oatbran and let it cook for 1-2 minutes, then I added some cinnamon, 1 Tbsp chia seeds, 1 Tbsp vanilla rice protein powder and 1/4 cup mashed yam (that was my invention). I let it thicken a bit and took it off the heat.

Once it was in the bowl, I added a spoonful of cashew butter. Then I tried it. At first bite, I liked it. Then I thought it should be sweeter, so I added a few drops of vanilla stevia. Then it was sweet. Then it was sickening. I don't think I like hot cereal.

I can't tell you the last time I had a 200 calorie dinner! Not to worry, I went to a movie premiere and ate 2 delicious bites of Japanese pastry and a bite of carrot cake, then came home and had some cheese.

And I enjoyed our first bread class today (post coming), so I'm not in danger of wasting away.



Seemed like a good idea at the time...and it looked yummy.

Oatbran With Chia Seeds


I have been madly reading other fabulous food blogs and am so inspired/overwhelmed with ideas and recipes. I decided to make Heather's famous oatbran that she loves so very much, it is a daily occurrence (at least).

Here is her recipe and if you read her blog in depth you will find that she makes oatbran with many, many things, including veggies. Very inventive and intriguing.

I took her basic recipe and substituted the 1 cup of hot water with 1 cup of vanilla hemp milk. I also added a mashed banana.

I served this to husband and he was very happy. I think I'm going to try some with mashed yam, cinnamon and a touch of butter next. Hungry!

Turkey Sausage Pasta Bake



Pasta bake. One of my standards. I love this one because I can get rid of leftovers easy.

I start by browning some turkey sausage with a bunch of chopped onion, add whatever veggies and tomato sauce, boil some pasta, dump in a bunch of tofu cheese (for lactose intolerant husband) and bake at 350 degrees for 30 minutes. I freeze whatever is left in individual containers and have dinners ready to defrost.

I was quite proud of this batch. I used some sauce I saved from the bison meatballs, so it was very rich and kinda creamy.

I was excited to serve this to husband as he thought he was getting leftover vegan chorizo pasta bake which he didn't really like (little did he know I threw that out and made him a fresh one because that's how deep my love is).

When I got home I asked him how he liked it and he said, "good, except I had sausage for lunch". Okay, if you think you're having CHORIZO pasta bake, regardless of whether it's actually a meat product, wouldn't you have fish or perhaps chicken for lunch? This irritated me greatly, which is totally irrational on my part. I want everything I make that passes his lips to be the BEST thing he's ever eaten and I want him to praise me accordingly.

Realistic this is not. It is also unrealistic to think he will ever put half eaten food into the refrigerator covered or that the dishes he washes with a scrub brush instead of a sponge will come out perfectly clean. That's what an immune system is for, right?

Conscious Eating Takes A Turn


So many excuses. Husband was sick and needed to recline as much as possible. It's the NBA playoffs and we have too much to watch. The dining room table has gone back to a decorative only piece of furniture.

In between texting, shopping for new money software and managing the remotes (I know, it's a slippery slope), husband scarfed down a chicken burrito, guacamole, steamed veggies, refried beans, chips and salsa.




Mine: cucumber and celery, broccoli, cheese, nuts and dried pineapple.

I did some good work today on a book proposal for a client. I'm pretty proud of the progress and most importantly I LOVED the process. If I could do this full time (and full time meaning 25 hours a week max), that would be totally awesome. I like writing, but I enjoy editing and shaping to support someone else's story even more.

Chicken Ravioli


This was husband's dinner on Sunday. I've been a bad blogger. It's the beginning of the month and I usually get lots of new work, which means I neglect my little blog that I love so much. Now I have to try to remember what I did on Sunday...

This was leftover chicken ravioli from Earth, Wind and Flour with steamed veggies, tofu "Parmesan" cheese and micro basil from my kitchen herb garden. I had my usual.

I was very tired on Sunday and took a two hour nap. Mysterious. Then I was groggy. Not mysterious. Oh! I cooked meals for the week: meatballs, pasta bake, cleaned loads of veggies, etc.
