Vegan Coconut Lemon Shortbread Cookies


Hmmm. Almost there. The lemon flavor was right on. The texture was perfect: buttery and crisp. However, I used a stevia baking mix as the sweetener and it did not work. Weird aftertaste. Also needs more coconuttiness. I actually gave some of these to my neighbors before I tasted them. Now I'm embarrassed.

I will try again, maybe trying brown rice syrup. In the end, I might need to use evaporated cane juice. I'm also going to try adding some coconut milk.
