Baked Orange Roughy With Vegetable Ragout And Roasted Fingerling Potatoes
Easy peasy. I sauteed everything but the kitchen sink (onion, garlic, yellow peppers, red peppers, tomatoes, mushrooms, snap peas...) with some olive oil. When it was all saucy, I poured it over orange roughy and baked it in the oven at 400 degrees for 15 minutes.
The potatoes were roasted in the same oven for 45 minutes. Done.
