Husband wanted to eat more fish, so I've been getting creative. I roasted the tuna steak with garlic, lemon and butter until it was cooked around the outside, but still very pink on the inside. I pan roasted fingerling potatoes and whipped up a lemon, garlic butter with a bit of Romano cheese which I finished the potatoes and veggies with. With all that fish, we've got to have some indulgence somewhere, right? It's light butter anyways (don't tell husband).

Dessert was blueberry-mango crumbler: frozen blueberries and mango tossed with cinnamon, a touch of butter and vanilla stevia. Add about 1/4 cup of granola and bake, covered in a 375 degree oven for 25 minutes.
