Leftover Curry Chicken Thighs And Yam Mash



I had to have some of this yam mash.  So freaking good!  I bake the yams until they are very soft, take the skin off and mix in salt, cinnamon, light butter and tofu cream cheese.  It's Thanksgiving in your mouth.  Served with curry baked "fried" chicken and steam veggies.  Now I'm hungry again.
