Potato chip crusted chicken thighs

This is so Midwest, but I am a Midwestern gal. And I hate to waste food.

I bought husband some baked potato chips and his reaction was, "wow, these taste really healthy". So I crushed them up, took marinated chicken skinless, boneless chicken thighs, dredged them in egg mixture, then coated with the chip crumbs. Baked at 350 degrees for 40 minutes. He likey.

Chicken was served with my yam mash and steamed veggies.

I had the usual. Too boring to photograph.
