Chicken salad sandwich

I took what was left of the baked "fried" chicken, shredded it, added chopped egg, onion, mayo and cilantro dressing.  Served on a low carb roasted onion bagel with tofu cheese, heirloom tomato and organic greens.  Steamed veggies and salt and vinegar chips accompany.


Mine:  cucumber, green beans, cheese, nuts and dried pineapple.
