Monday night dinner

For me: green beans, cucumber, cheese, nuts and pineapple.

On Mondays, I have a massage client and husband has an evening meeting, so I put his dinner out for him since our paths do not cross.

salad: romaine and baby mixed greens, heirloom tomato (amazing, from Trader Joe's...so good, like candy), tofu cheese and cucumber tossed with a lemon chive dressing.

chicken: sliced skinless chicken thighs with black beans and corn. Served hot and tossed into the salad just before eating. Add crushed blue corn chips and dig in!

I will ask him what he thought of it when I "see him in bed".
