I was tired of cheesy bread stuffing for my main dinner event, so I made some mashed yams. Just bake at 400 degrees for an hour and voila! I looked up the calorie content of a plain baked yam (I had 400 calories to spend) and that bought me 12 ounces, which is a lot of yam. Yum. I mashed mine up and added kosher salt, cinnamon and lots of "butter spray". I also had green beans, cucumber and baby tomatoes, string cheese and yes, you guessed it, dried pineapple rings.
This dinner tasted good but I am already hungry. Go figure.
Husband had his baked "fried chicken", steamed cauliflower and broccoli, baked yam and fried banana for dessert.
We did not watch the debate tonight, although we did record it (like we're going to watch, please, who are we kidding?). I'm a bit over the whole thing. Mud slinging is not fun or interesting to me. I'll stick to cooking.
Second that. I'm tired of the debates. I know I need to watch them, since I'm undecided, but I'm not sure they help. I get really tired of hearing people get angry with each other or call each other names. I can't believe I have to elect anyone who acts like that, no matter which party they represent.

p.s. I love yams. Love, love, love them. One went into a butternut squash soup tonight.
