Take one package of Jennie-O Italian Seasoned ground turkey and throw it in a food processor
Add the following before processing:
1 low carb English muffin, crumbled
1/3 cup Romano cheese
1 egg
1 package frozen chopped spinach, thawed and lightly drained
1/2 white onion, chopped
1/2 cup tomato sauce
Process until combined
Put in sprayed pan (I like using a round 9 inch cake pan, but any 9 inch pan or loaf pan will work), top with more sauce and a cheese of your choice, cover lightly in foil and bake at 350 degrees for 25 minutes, take foil off and bake another 20 minutes to get the cheese bubbly.
1 Peach, cut into bite-size chunks
1/2 cup sliced strawberries
1 teaspoon honey
1/2 teaspoon cinnamon
3/4 cup granola
1 Tablespoon butter
Toss fruit with cinnamon and put in a sprayed baking dish. Cover fruit with granola, drizzle with honey and dot the butter all around (or you can melt the butter and drizzle it over the granola). Cover with foil and bake at 350 degrees for 30 minutes.
The thing is, I'm so far removed from even entertaining the idea of dessert, I don't even crave it. And somehow, making it for someone else is like eating it myself...when I was way crazier about food then I am now (I know), I would obsessively read cookbooks and after awhile I would be like, "wait, when did I have pot roast? Oh, that's right, it was in the Betty Crocker Slowcooker Solutions I was pouring over as I ate my sugar-free fat-free yogurt with 1/3 cup of Grape Nuts-again".
