Hello. I am still here and still cooking. Promise. I've been on the down low lately and, quite frankly, am finding myself in a bit of an introspective, reflective place. Trusting it, y'all.
I made some pumpkin pancakes for my boys on Sunday. Husband topped his with Earth Balance, syrup and sliced bananas. Austin had EB and syrup, and I also made them tofu cheesy scrambled eggs.

This was a good idea in my head. Honey Bunches Of Oats, mini marshmallows and peanut butter chips. Tried to nuke it for 10 seconds at a time and thought it would make an ooey gooey Rice Krispie Treat sorta thing. Nope. Just got hot and marshmallows turned to little burney rocks. Fail. Next time, stove top!
