Another great meal when you have a cold: tomato soup and grilled cheese. The soup is Campbells Healthy Request with one can of water (I prefer milk but husband is lactose intolerant and swears he likes it with water-he's the boss). The sandwich is whole wheat bread, generously buttered (Land O Lakes light butter), tofu "cheddar" cheese and two super thin slices of heirloom tomato.
Mine: cucumber, broccoli, cheese, nuts and a bosc pear.
It was definitely time consuming preparing four meals a day. I also had a ton of writing work, hence the lack of blog posts this week.
